The Heartbake: Easy Banana Bread
Hey there and welcome to our second entry of The Heartbake: Baking My Way Through My First Heartbreak!
I am so incredibly thankful for all of the love and support from last week's entry! The response has just been so amazing and I feel so much support from each and every one of you!
The first couple of days after my breakup were very difficult. It was hard for me to eat and I couldn't sleep for very long either. I watched lots of tv, and I went to Target countless times with my mom.
After a recent Costco trip, there were some leftover bananas that were looking like they needed to be used ASAP. I prefer to eat overripe bananas, but I decided to use them in this amazing Banana Bread! I hope you enjoy this simple but delicious recipe! Thank you and remember, Stay Tasty!😋💜
xoxo Lyla
Ingredients
- 3 overripe bananas (mashed)
- 1/3 cup melted butter
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons of vanilla extract
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 1/2 cups of all purpose flour
Directions
- Preheat your oven to 350º F.
- Prepare a loaf pan (my pan is 8.5 inches) with parchment and grease.
- In a large bowl, mix together bananas, melted butter, and granulated sugar.
- Add in your eggs and vanilla and stir until combined.
- Add in the baking soda, salt, and flour and mix completely.
- Pour the batter into your prepared pan and bake for 55-60 minutes. When you take it out, insert a toothpick into the middle of the loaf. If it comes out clean, it is done.
- Let the loaf cool for about 20 minutes before taking it out of the pan and leaving it to cool completely on a rack.
- Enjoy!
