The Heartbake: Easy Banana Bread

Hey there and welcome to our second entry of The Heartbake: Baking My Way Through My First Heartbreak! 

I am so incredibly thankful for all of the love and support from last week's entry! The response has just been so amazing and I feel so much support from each and every one of you! 

The first couple of days after my breakup were very difficult. It was hard for me to eat and I couldn't sleep for very long either. I watched lots of tv, and I went to Target countless times with my mom.

After a recent Costco trip, there were some leftover bananas that were looking like they needed to be used ASAP. I prefer to eat overripe bananas, but I decided to use them in this amazing Banana Bread! I hope you enjoy this simple but delicious recipe! Thank you and remember, Stay Tasty!😋💜

Ingredients

  • 3 overripe bananas (mashed)
  • 1/3 cup melted butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 1/2 cups of all purpose flour 

 

Directions

  1. Preheat your oven to 350º F.
  2.  Prepare a loaf pan (my pan is 8.5 inches) with parchment and grease. 
  3.  In a large bowl, mix together bananas, melted butter, and granulated sugar.
  4.  Add in your eggs and vanilla and stir until combined. 
  5.  Add in the baking soda, salt, and flour and mix completely.
  6. Pour the batter into your prepared pan and bake for 55-60 minutes. When you take it out, insert a toothpick into the middle of the loaf. If it comes out clean, it is done.
  7. Let the loaf cool for about 20 minutes before taking it out of the pan and leaving it to cool completely on a rack.
  8. Enjoy!
